I have always had a love for baking. I still remember the days baking rusks with my granny (I loved it!). I got diagnosed with Hashimoto’s disease in 2015 and it was then that I really fell in love with baking all over again.
After being diagnosed, I had to start eating gluten free and this was so daunting. Hashimoto’s is an autoimmune disease and the antibodies react to gluten the same way celiac disease does. I felt so lost – how can I not eat my favourite cake or brownie baked goods anymore? Most people who see or hear that something is gluten free would run away and not even think about eating it, because truthfully, they probably don’t taste very nice. I will admit, I have also tasted some products that are really not tasty and not up to standard at all.
After going through all of these horrible experiences, I told myself ‘why should eating gluten-free mean having to eat unpalatable baked goods?’ So, I made it my aim to bake the best gluten-free baked goods, so good that you can’t tell the difference and you can enjoy all your favourite goodies!
Since I was diagnosed, I have had a few family members who had to change to eating gluten free. I realised that there are so many people out there needing recipes that work and who want to indulge in delicious baked goods. So I started The Gluten Free Side of Life so that I can share the best recipes with you!
