This creamy breakfast polenta porridge is the perfect breakfast to start off your day and a tasty alternative to oatmeal and as a bonus is naturally gluten free.
It will keep you full and satisfied for longer than a quick cereal breakfast. It is one of my favourite go-to recipes for breakfast and I am always happy when I had this nutritious breakfast.
What Is Polenta?
Polenta is a Northern Italian dish. It is very versatile and simple which is what makes it popular. Polenta can be made into a savoury and sweet dish. Polenta is made from stone-ground dried yellow corn kernels. The taste of polenta is similar to cornmeal grits but is a little less velvety and less starchy.
Polenta is naturally gluten free making it a perfect breakfast for those following a gluten free diet. It has become more and more popular especially since it is inexpensive and easy to prepare.
Health Benefits Of Polent
Polenta on its own is low in calories. It is a complex carbohydrate which means it won’t spike your blood sugar and takes longer to digest. Polenta is also a source of fibre and protein which adds to digestive health. Polenta is also low in fat.
You can ensure your polenta is kept a heart-healthy dish by being mindful of the additions made to your polenta.
A note on ingredients for this creamy polenta breakfast porridge
Butter
This recipe does contain butter which makes it soft and adds a smooth texture. You could replace the butter with margarine or a vegan alternative should you prefer.
Milk
If you prefer a dairy-free alternative, use your favourite plant-based or another milk alternative.
Honey
Replace honey with maple syrup or any other sweetener if you prefer.
Mascarpone
You could skip the mascarpone cheese (oh, but it is what makes this breakfast polenta extra creamy and delicious). You can also replace it with a dairy-free cream alternative or normal cream.
